My name is Scotty and I like to share delicious coffee with people.

I set out over ten years ago to discover what coffee I liked best, starting with local stores, quickly moving on to coffee from local coffee shops and then trying coffees from various roasters throughout the US and taking detailed coffee cupping notes (hence “Noted”).

I got to sample a lot of different high quality coffees from various roasters in Northeast Ohio thanks mostly to Slow Train Cafe and The Local Coffee & Tea in Oberlin (definitely check them out if you are ever in the area).

About 6 years ago I started home roasting coffee and was surprised that I liked coffee that I roasted as much or more than coffee I could find from other roasters. I then started Noted Coffee Roasters in 2019 as a way to share this passion for coffee with others and to help others explore their own coffee preferences.

I started selling at a local farmer’s market – the Farmer’s Market of Medina County, and then I scaled my operations in order to have the sample quantities needed to attended the Columbus Coffee Festival.

I started roasting coffee using a commercial machine in Cleveland, Ohio through First Crack, which has allowed me to scale my operations in a financially feasible way while still having complete control over every batch.

I’m now in preparation for setting up a commercial roaster on my property in Grafton where I’ll be roasting and processing orders as well as offering coffee education, coffee classes, and community events.

Why the focus on mental health awareness?

I’ve struggled with anxiety and depression most of my adult life and have recently found some really helpful outlets for me. I create mental health related art and find that expressing myself and sharing how I am feeling with others is super helpful for my mental health. I am bringing this into Noted Coffee Roasters because it is an important part of who I am and I also want to use my business to help others find this sort of outlet and community. I want others struggling with mental health disorders to feel less alone.

I’ve partnered with NAMI Greater Cleveland and am dedicated to donating a percentage of all sales towards a local mental health nonprofit in addition to taking other steps to increase mental health support in the local community.

What makes Noted Coffee Roasters some of the best coffee Cleveland has to offer?

What separates me from other coffee roasters? Well there are some reeealllly good coffee roasters in Cleveland Ohio and I would gladly drink their coffee if I couldn’t drink my own coffee every day (one of the perks of roasting your own coffee). But I still prefer to drink my own coffee every day because… I just like my coffee better.

Maybe it is because I am a single person operation controlling every aspect of my coffee. I have a painstaking attention to detail and desire to improve my coffee with every batch that I roast. I actually set aside a bit of coffee from every single roast and taste it myself for quality control. I just can’t stand the idea of not knowing for sure if my coffee is actually good from batch to batch, even if following the same roast profiles. There are so many variables when sourcing and roasting coffee, and I try to learn from every batch.

And then there is the coffee itself. I take a lot of care into selecting coffees that are high quality and that taste ridiculously good. And then I roast them in a way that brings out the best of each coffee. As a roaster it is not as much about being amazing yourself, as it is finding good coffee and understanding how to make the coffee shine.

While there are many specific qualities that make some coffees better than others, I believe we all have unique tastes and have different things we are looking for in each cup of coffee.
